I resently got a 3000mah battery to power my ua-5 (which should arrive saturday!) and it came with a AC adapter with a Tamiya connecter at the end .... how the hell do i use this thing w/o overcharging the battery? Or do i just stop being a cheap ass and buy a "smart" charger down at the local rat shack?

The way i understand rechargables is that they get "warm/hot" to the touch when they have fully charged. This is what i have been doing with mine. You probably could make a good estimate of the time by seeing if the mAh the AC/DC puts out. I have an adapter that puts out 2000 mAh, and i have 4000 mAh batteries, so I plug mine in to a wall timer set for about 2 hours and 15mins (assuming it's drained all the way) and let it go. I haven't tried it as of yet but i bought a cigarette adapter for my car, and I am going to try that too (for on the road use). If anyone has experience with that please let me know.

i believe this has been discussed in quite a few other threads.
if my memory serves me correctly, you wont overcharge the RC batts.
if you charge them for 15-24hours, you should be good for about 6hrs+ running the UA5 with phantom. i have no clue how long the UA5 will last without phantom, which is how i run it, but i might try and test it one day.
btw, i have the same set as what you have in the pic above in your post.

If your wallwart is the same as the one I got with my 3000mAh, then it's output is 200mAh. If your battery is completely drained it will take 15 hours to fully charge.
