If i were to make a 3' aluminum bar,  use 3/4" or 1" width?

It all depends.

For instance- my 6' bar is about 3/8" at it's thickest point in the middle, narrowing down to 1/8" at the ends. But that isn't likely to work for you.

Nak CP4 shotguns will be the heaviest that Ill put on it.

mounting holes, or slotted bar, i can't decide.

If the flat-bar stock you are using will be mounted with it's flat surfaces facing up/down (which is how most are used), the thickness of the bar-stock is going to be much more critical in controlling flexure than it's width.  Width shouldn't matter very much as long as there is sufficient material around the holes or the slot.

Probably need to grab a piece and get a feel for how resistant it is to bending.
