Hi my current stealth set up is
Roland R-07
Church Audio Bat 2B – Battery Box
SP-BMC-2 Sound Professionals Mini Binaural Microphones Omni-Directional  with windscreens included Standard sensitivity.

This provides great results for 95% of shows.  The only ones that are bad, are where the bass is ultra loud, mainly by reflection from walls. 

Would switching to Cardioid microphones solve this problem?

I don't think cards are going to help you much with standing bass waves, other than cards naturally having somewhat of a "natural" bass rolloff compared to omnis.  If excess bass really is your only problem, it seems to me that can be better addressed in your post processing.

I second heathen and recommend doing EQ on your files. You will be surprised with how much you can change the sound - I saved a recording I thought was garbage and turned it into something enjoyable with only a bit of (tasteful) EQ. Reaper is the program I use.

That's what post is for if its a serious issue.  Better option than using bass roll-off

Cards are generally a better option  unless you are in a small club or next to the stacks.

When doing post for a bass heavy show, I generally use high pass at 60-80.  Honestly you won't hear much below that.
