okay,  now, new question...  is there any kind of equipment i can use that slows the eratic level movement?  because during some intense jams the levels can go from far left... to waaaaay right (0db).    what i'm asking, is there anything that can keep these jams from moving say 6 or 7 bars down to 4 or 3 bars?

some sort of compressor, maybe. but you don't really want to do that unless you're recording some real soft shit.

You want this but, not to cream zero.  This eratic movement is showing that your mics are sensitive and can pay attention to detail (good resolution)...if you get creamed then your level are too high and you should turn down SLOWLY to an acceptale level.  Generally if you get your levels set at the beginning, then you should be ok and may need some fine tuning once the soundman gets it to where he wants...NOW if you run hot and they turn it up at certain parts....then you'll get creamed.
So basically keep the dynamic range in there (eratic movement) but set your levels so that they don't slam 0.  sometimes we all have to turn it down during parts of a jam where the soundman is enjoying the show and adds some more volume to it.

hope this helps

just leave a little headroom, with the music you're taping. i show up at ministry, set levels almost pounding 0 by the kick drum, and once that's dialed in i never have to worry about them again...
but the jammy stuff, with real sound men... can't tell ya much but to leave a couple dB of headroom just in case!
