I would suggest a used Sony vx2000,Sony vx2100,Sony pd 150 or Sony pd 170.
For low light there is NO better camcorder than these.IMO

The HV20 is amazing, and you can find it for $700-800...

Pretty much every consumer grade camcorder is going to suffer inlowlight to some degree.  Some are slightly better than others.  The Sony prosumer models perform very well in low light but you'd have to get a used one to stay in your price range.  I use the Panasonic PV-GS series of 3CCD consumer models and in good lighting they are great.  In low light they add electronic gain which makes the picture a bit grainy but still clear.  I've seen the Canon HV20 and have been impressed by it.  For your price range I'd recommend the Panasonic PV-GS500 or Canon HV20.  The Panasonics are out of production but they can still be found new at the moment.  Six months from now may be a different story.

I'd also recommend getting some decent lens filters to protect your lens from dust and damage and a fluid head tripod.  If you are going to do any moving shots on tripod a fluid head is a God send.  I don't have one right now and I'm suffering.

Canon HV-20....I've read is the best for low light.
A six pack a day, that's all we ask.
