If the vocals are mono and the instruments are stereo, you could try adding the two channels together, then inverting the signal, and mixing some of that with the original, in order to reduce the center content?

Izotope RX7 Music Rebalancer

Single best tool I've experienced.

In hardware, a Dolby 740 can do a lot but it's a very processed sound if used heavily.

Phase inversion and mono summing/filtering/re-mixing in various incarnations, as said.

Back before there was good digital noise reduction, I found with a lot of mono tapes with high hiss levels that I could transfer them on a stereo deck, and then use mid-side processing to turn off the side signal, which would be mainly hiss.  Now with RX7 etc there are lots of tools for that.
Mics: DPA 4060 w/MPS 6030 PSU/DAD6001/DAD4099, Neumann KM 131, Oktava MK 012, Sennheiser MKH 105, MKH 20, MKH 30, MKH 40, MKH 800 TWIN
Recorders: Zoom F8n, Sony MZ-R50

Stopped in with this snarky response top of mind, mid processing suggestions, and mention of RX7 Rebalancer (aware but haven't used it).  All well covered!
