Seeking advice on which recording software to use

Ive tested a few out, cubase, acid, fruity loops, but didnt really find what im looking for. I need a simple mixing/mastering station that uses its own engine (like cubase, but unlike acid which uses internet explorer or some retarted interface which caused my computer to freeze). Cubase was too much for me to learn, Fruityloops was too basic, not enough control. i still want something that will give me a good amount of control over various elements like changing tempo dynamically, graphical midi editor and support for VST's.

Theres just so many progs out there i dont really know where to start.

What's your budget?  Have you tried Samplitude v8 SE?  ~$50.  Edit to add:   Not sure if it'll meet your feature requirements (e.g. MIDI stuff, never touched the stuff), but worth a look for such a low price and broad feature set.

no budget, i just need something that works. It absolutely HAS to work with midi and be VST compatible.

Im already aware of all the big name progs that everyone uses, but what are some realtively unknown ones like reaper?

theres a program I used in high school exclusively for MIDI editing and creating.  It is called Cakewalk.
