is it possible to feed a digital signal through either the spdif or optical in AND an analog signal through either the xlr's or 1/4" jacks, yielding 2 stereo (or 4 mono) tracks?

As you can guess, I am wanting to run a feed from a board in addition to using two mics in a room through a 410 to a laptop.

yes. you will need multitrack software on your laptop. I have used cool edit pro, kristal (free), and vegas 5.
