I worked on several ESPN college football games and they have a pile of MKH 416's that are on poles at the corners of the field facing the crowds. How is surround sound recorded on your typical blockbuster movie?

Numerous ways. Depends on the production, budget and directorial focus.  Effects are typically panned, orchestral soundtrack stuff usually recorded using big spaced arrays, location ambiences recorded in numerous ways from stereo to surround, using various arrays ranging from compact to larger spaced setups, and/or manipulated/created/upmixed using convolution reverbs and other advanced techniques.  Blockbuster movies are where the big money is, and have budgets far larger than any music labels recording in surround.
