The first 2 cables you list are the same:
Stereo 1/8 mini-plug > dual mono RCA plugs. Obtainable at any radio shack among other places.

I've never seen cable like the third one you list. I doubt if you really need it. I don't know what equipment today has 2 RCAs for a digital stereo signal.
Just get the toslink to toslink and perhaps an RCA coaxial digital cable

and you should be able to connect to most anything.
For what it's worth I never sprung for a digtital coaxial cable. I just pulled a cheap pair of stereo RCA cables apart and used one of them as a digital coax cable. Worked fine.

Difficult to tell from the illustrations but I'm wondering if the deck end of those 1/8" cables isn't TRRS rather than the more common TRS. That third cable appears to be TRRS and since the RCA ends are Input and Output unless both RCAs are using a common ground it would have to be a TRRS plug going into the deck. If that's the case it shouldn't be too difficult to fabricate a cable if the pin assignment is known. (That said I generally hate soldering 1/8" plugs due to the limited space and my poor soldering skillz.)

The analog inputs are simple stereo mini-jacks. I downloaded the manual before my previous post and checked it out. At least it specifically says you can directly connect a microphone with a stereo mini-plug.

Upon rereading the manual, I see that flipp is most likely correct as to the 3rd cable.

From the pics it looks like there are 4 conductors on the cable not 3 like most Stereo 1/8" > RCA (as I guess T (Tip) R (Ring) R (Ring) S (Shield) means) -oops
One of the conductors is shorted when used in analog and not when digital so as the diagram points out you will want to see if you can track down a pin out to be safe.

It's definitely a TRRS 1/8" plug. I wonder if using something like this would give easy access to both the analog and digital signals:

Or pick up a plug and fire up the soldering iron. It shouldn't be too tough to figure out.
