Looking at a used set of Countryman B3's.
There are standard sensitivity and low sensitivity
(Unfortunately these are the "standard sensitivity")
I'm wondering if "low sensitivity" vs "standard" would make any difference if
I get the pair re terminated to 1/8" stereo mini plug with the 4.7K mod
Which makes me wonder if Countryman actually uses a
Different capsule or if their "low sensitivity" is accomplished somehow in the
cable?

This doesn't answer your question but i've found countryman to be very responsive to questions.
Here is some info i previously received from Rosa @ countryman asking about the max spl of RED band and No band versions of B3.
NO BAND
B3 W4 (no band)
SPL 130 dB, Output Connector: pigtails or wireless connection as specified
SPL 140 dB, Output Connector: XLR-3 Male (contains preamp)
RED BAND
Wireless: 140 dBA SPL (5V, red band)
Phantom: 150 dBA SPL (48V, red band)
