I'd grab Hypno's chopped Teacs ($190) and a tinybox ($250-$300)!!  Total around $450 and You'd have a great sounding, compact rig that fits your budget.  Eventually you could also add some omni caps

You asked for other mic options...give NAK300 and/or TEAC ME-80 (clones of the NAKs) a listen.  There are several pairs for sale presently in the yard sale in the 200 - 250 range.  Great bang for buck.

Much smaller that the stock TEAKS or Naks, don't need to worry about batteries, and some say they sound even better that the stock mics. They only come with cardioid caps, but I have Franken Naks and have never used the omnis.

I'd save a little more and buy the high end rig you'll want eventually anyway. These days getting into a low pro schoops rig has never been easier or less expensive.

2 mk4s go for ~ $1000 in the Yard sale.
a Vark KCY is about $600
and a Niant PFA is $70 and allows you to run into any 48v phantom.
