Are they able to be reconnected / soldered? I have read about some headphone jack replacements on these and have seen some replacement parts available.

in theory, i could have soldered it back to the board.
unfortunately the connector seemed to be glued together.
after it broke free from the logic board, i tried to disconnect it and pulled away from the other pcb(headphone side).
i can say i wasnt the gentlest with this, but work with these small connectors often enough that i should have been able to accomplish taking it apart.

ive also done the iflash upgrade for my classic 7, 512gb is sweet.  have one for live tunes and one for studio, cant be beat.
