Hi Marc.
I'll occasionally record an audio stream on my laptop and use the settings as shown in the attached screenshot.
Hopefully that'll work for you too.

You can set stereo or mono recording in the preferences, but the setting is under DEVICES, not RECORDING.
Project Sample rate is determined by the settings of the open window, initially set by preferences.
Bit depth will be set under QUALITY
