Anyone know how to do this so that each track remains left & right but as a stereo track?

I have two mono tracks and when i did a mixdown it basically combines them so they sounded the same ...I hope this makes sense?

go into edit mode on a track and then select either the right or left chennel individually by i believe pressing up or down on your keyboard. then paste your corresponding mono track into that channel, then do the same with the other channel. I hope that makes sense

Audition has an excellent help file;  from the help file:

To create a stereo waveform with different waveforms in each channel:

   1. Copy the mono waveform you want to place in the left channel.
   2. Create a new file, and choose Edit > Mix Paste.
   3. Select Overlap, and deselect Lock L/R. Set the left volume to 100%, set the right volume to 0%, and click OK.
   4. Copy the mono waveform you want to place in the right channel.
   5. Switch back to the new file you just created, and choose Edit > Mix Paste.
   6. This time, set the left volume to 0% and the right volume to 100%. Click OK.
