I think I carry way too much gear.  But then again those extra batteries have saved my butt some times

I chose the third option because 95% if the shows i tape i know i will be the only one there taping.  The other 5% of the shows i bring backups just in case another taper forgot something or someone wants a patch, etc.

I used to carry way more stuff than I do now.
I've cut down on the stuff I carry though the years.
I still do carry: flashlight, earplugs, a spare cord or two, mini-screwdrivers, plastic bags and Rolaids. ;)

ive been thinking about traveling around somewhere, maybe here maybe not and gathering sounds. 
this would definently be a time for minimalist taping, possilbly minimalist everything.  ive got a pmd-670- need to get this modded before i go abroad, but it may be worthwhile to carry an outboard pre.  has anyone done travel taping esp. rugged taping?  how would a taper fare in the rain forest? 

but i know batteries and bags are always key.

you never know when some drunk asshole will spill a beer on a table w/all your gear.

if it's not, i bring just about everything including a bunch of stuff i have yet to ever need.

I've got a little too much boyscout in me.  I bring as much as I can fit into my bag, but my audience recording bag isn't uncomfortably big.  Not 2 of everything, but I'm prepared for most any situation, and have yet to not pull a wav because I didn't have everything I needed.  The closest I ever came was to forget my stand, but I had my clamps in my bag and another taper let me clamp on. 
     When I bring my matrix rig, it is really bad.  I bring most everything I have.  It's funny that you mention a table!  I'm currently working on a backpack to cary my matrix rig that uses parts from an old persons walker as the frame so I can unfold it and use it as a table for my mixer!  When I'm at a festi with my matrix rig it is the worst.  I even bring a soldiering iron, and I'm starting to put together a homemade 30', 12 chan snake so I can take direct lines off the FOH console.  Yea I know... its time to lay off the crack.
