I want to make some RCA interconnects, but I also want to make one or two instrument cables. Can/should I use the same cable for both? If so, does anyone have something specific to recommend? I'm guessing I want something shielded for the interconnects since they're unbalanced.

You can use 2 conductor wire for both as long as the instrument cable is mono (like a guitar cable).
This is the cable I use for guitar. https://www.markertek.com/product/w2319-ft/mogami-w2319-high-impedance-transmission-guitar-cable-black-per-foot

W2319 is half the cost at Redco https://www.redco.com/Mogami-W2319.html
Their selection for all things cable is good, and their service is top notch.
