I want to record Mid-Side to DAT . . . and convert to Left-Right either during the transfer, or in an editing program.  What program does this best?

I use Wave Lab 5 with the Waves S1 Imager plugin tool.

you dont really need any software to do this.  if you record the mid mic on track 1, and the side mic on track 2 - you just make a copy of track 2 on a third track, and reverse the phase on the third track - just mix and go.

what do you mix for L & R? 
L=track1 + track2
R=track1 + track3
???

the two side channels are your LR - the mid mic stays centered.   look at this short discussion on PAIA's site - the page is about a decoder kit they sell, but about half-way dpwn the page they discuss "Alternatives", and provide a drawing/schematic of the setup i am describing to you.  http://www.paia.com/msdecwrk.htm
