Just got a JB3 and am looking to go from my mimime's aes to an optical. I figured a short xlr, Hosa ODL-312, the battery cable, and optical cable would do the trick. Is the 110 ohm thing a factor here? Can I use any xlr? Do I need a 110-75 ohm converter? Just want to make sure.

I'd use a 110 ohm rated cable, though you could probably get away with another for such a short run. No need for the 110 > 75 ohm converter.

nope, i run v3>aes>312>optical>jb3 flawlessly, also, alex herd runs dmic>aes>312>optical>jb3 w/ great success ;)
do it, you'll never look back, locking xlr's are the shizzle

yes you absolutely can get away with a short run of xlr cable, although ideally the 110 ohm rated cable is your best bet. i lucked out finding one laying around at sonic sense for cheap.

you can also use 75ohm coax cable for an AES>RCA cable since the cable is being unbalanced immediately.
i prefer to use the 75ohm cable over 110ohm because you'll have a better connection at the RCA end (2 conductors in contrast to 3). on the XLR end, all you have to do is split the shield to Pins 1 and 3.
if you used a 110ohm cable, you'll have 2 conductors grounding at the RCA end, which is not preferred.

Last I checked, Full Compass had the best retail pricing. Ignore the website price and call 'em - most folks have gotten 'em for around $55 shipped.
