Can anyone help me get a better handle on Post-EQ, tracking, compression, dithering, resampling ?

My goals:

Develop and save a few baseline curves that will help my mics/pre/A-D under preset circumstances for specific venues and types of venues (outdoor, small clubs, frequented clubs, etc.).
I would assume this to be done with a parametic EQ in Soundforge or Wavelab.
Any suggestions, resources, and How-tos ?

I expect to be recording 24/48 and frequently creating CDs.
Should I just go 24/44.1 and resample ?
Which dithers are the best for SoundForge 6 and Wavelab 4 if I do go 24 to 16 bit ?
Should I compress when going 24 to 16 bit or does the dither take care of that ?

What is the best way to track ? Split the WAVs ? Apply markers and generate a TOC ? What parameters(boundaries?) do I need to consider for CD ? How about DVD ?
