I've looked all over for the answer to this question.  There are some VERY informative posts about.  Some posts a little too informative.  Way over my head.  

I used to run v2>ad2k>multiset coming out of the xlr outs on the ad2k into the spdif in on the multiset via a custom audio magic presto 2 digital cable. I just ordered a v3 yesterday and I'm worried as to whether I'm still going to be able to do this on the v3 b/c on the ad2k I had an option to choose if I wanted AES or spdif out and I just set it to spdif.  The v3 doesn't offer this option i don't think.  Am I going to be able to come out of the AES on the V3 and into the spdif on the multiset via this same cable or do I need to need to get a spdif>spdif cable and do it the easy way?

Did you check the V3 manual on the Grace website Support page?  

The V3 is set up to transmit digital signals from three different outputs:

Coax (75 ohm)
XLR1 (110 ohm)  - labelled as AES1 in the V3 manual
XLR2 (110 ohm)  - labelled as AES2 in the V3 manual

Coax and XLR1 share the same transmitter capable of either AES/EBU or S/PDIF, selected by internal jumper

XLR2 has its own transmitter which always transmits AES/EBU.

I think what you want to do is use XLR1 to send a S/PDIF signal.  No problem.  Set the internal jumper to S/PDIF (see the manual for the jumper, I think it's labelled "consumer").  If you're to use XLR1 to send S/PDIF over an XLR > coax cable, you technically should use a 110 > 75 ohm impedance transformer.

That said, I don't use one and it seems to work just fine for me.  I run S/PDIF XLR1 > coax for my DAT, and use the coax S/PDIF output for patchers (of which I rarely have any, it seems).

i run the AES2 into the dap1 and leave tails out of AES1 and spdif for whoever needs it.
