Title: Finding a matched pair of 61a caps without a recorder that shows levels

Subject pretty much says it all.  Until I save up for a decent recorder I am going to be using a minidisc recorder that doesn't show levels.  I have 6 61a caps coming, but how do I find a matched pair?

So I have some limited experience with audacity, but only for splicing, and cutting things down for ringtones.  What levels am I looking at here?  (Forgive my severe ignorance for a moment) Just to see that the average "level" of how high n low the spikes go over a consistent tone are about the same?
