I see many people recording with a set of mics place opposite one another facing the sides.  What kind of microphones are they using and what is this called?

It could be any microphones, but if they look like cigars then at least you could bet that they're probably small diaphragm condenser mics.

Mics with a 90 degree spread where the capsules are 17cm apart, center to center, are using DINa.  If the spread is 20cm, that's DIN. 

Sometimes, like if you're outdoors, you can increase the angle to enhance the stereo imaging and overall soundstage...in that case spreading the mics at 110 degree angle with 17cm of space is called ORTF.

The NOS technique tends to be used as you get closer to the stage...that's 30cm of space with the mics at 90 degrees.

That covers the most popular 'standard' configurations...but if you really want to confuse yourself but learn a helluva lot about why these techniques work, read 'The Stereophonic Zoom' article which is stickied at the top of the microphones forum.

I will read that article, understanding the techniques is important.  The 'technique' i am referring to, however is more like a 180 degree spread?  I am guessing they must be using omni or bi-directional mic's, but i'm not sure why this technique is used.

My guess would be "Healy" w/ omni caps @ 180
