I have been recording for about 2 deacades, so I feel stupid that I can't find the answer to this.
I have not been doing stealth, so I just use regular mics and preamps with xlr plugs. I picked up some small mics used, I believe they are the Coresound stealth cardioids, and they terminate into a stereo 1/8" plug. How do I get that into XLR inputs, and what recorders would that plug right into for stealthy activites? Don't these mics just need bias voltage of about 5-8v, not regular phantom power?

Sorry for the noob question. I've never needed to know this before.
The Core sound mics as far as I know are using a reverse power. But I could be wrong. I have never seen a pair that were not connected to a battery box. If they are wired normally they should be ok with 9 volts I would not run any mic on straight plug in power. As far as running your mics from XLR there is a simple circuit DPA came up with to power the 4060 Its here somewhere on T.S and it is very simple to build and will power your mics correctly. I will see if I can find it.
Here is a link to the circuit. Note that Jon from Niant has made some very good points about what input impedance this circuit is expecting and has made some changes on the schematic for that. Also note the 10m cable distance IMO should really be no longer then 14 feet.

you want a battery box with those -- mics > bbox > your recorder (probably via a 1/8 in)
I believe the Naiant Littleboxes have XLR connectors?
