Title: How to mix a 3 channel recording down to a 2 channel recording?

Hi!

I´ve just recently made a three channel recording (one center mic and two split omnis). What is the proper way to mix this down to a 2-channel mix?
My spontaneus thoughts was to make the center mic a double mono and matrix with the L/R channels of the two split omnis or is there a better way?

You can do the omni double mono and pan each source to the left and right repectively.  I typically just leave it mono down the middle.  Sometimes I will even pan the stereo track hard left and right, respectively.  What ever sounds good to your ears is the way to go ;)
