Title: M+S suitable mic to Sennheiser MKH 60?

Having a MKH 60 - what do I look out for, when paring it with a Sidemic?
Sensitivity?
Frequency response?

Matching frequency response is important since you don't want the frequency balance to change when you vary the M to S level in post to get a good stereo image.  Of course you can eq the M or S channel so their responses match, but that is extra work.

Given a MKH 60 Mid, an obvious and excellent Side mic is the MKH 30.

Thanks. MKH 30 is the one I want, but guess I'm not the only one around, there aren't any used ones for sale :/

The perfect match is, of course, the MKH 30.

If you are stuck for cash - then the Ambient EMESSER would be the best 2nd choice.
