Am I correct that the top of the MK8 labeled "0 degrees" - also the side with the red dot - is what should be pointed LEFT when setting up an MK8 for M/S?

Cool, that's what I thought, thanks. I was just slightly confused since red means "right" in so many other cases.

it would work fine if the capsule was rotated 180*, but a positive pressure on the red dot side results in a positive voltage with respect to pin 2 at the XLR connector. It would even decode fine if recorded incorrectly, but it's best to keep everything in polarity.

The red dot/0* means "front" - and the front of the fig.8 points left in an MS setup.

If you do it backwards, you can always flip the phase in post.

If you recorded M/S with the figure-8 facing the wrong way, it would invert the polarity of the "S" channel signal and the resulting L/R channels would be reversed. You can see this from the basic algebra of M/S:
M + S -> L
M - S -> R
so
M + (-S) -> R
M - (-S) -> L
