I need a stereo microphone setup for video.
I'll be using the mics mostly on-camera for ambient sound recording (e.g. ocean waves, rustling leaves, vehicle traffic, animal/bird sounds etc.). But, the sounds need to be distinct. For example, with the factory on-camera mic, it's usually hard to get ocean waves to sound like ocean waves. So more often than not, they simply sound like white noise fading in and out.
The microphone setup, whether it's two mics or one, needs to be compact (i.e. no long shotgun mics).
In addition, I do not need the pickup to be hyper-directional, or omni-directional. Something that can emulate human hearing in terms of directionality would be ideal.
Can you recommend a few options?

The best emulation of human hearing is a binaural recording with omnidirectional mics.
Agreed but only when listening with headphones.
I once listened to a binaural recording of a man going to the barber shop for a haircut. The whole recording was very realistic, especially when the barber came in with the electric clippers to trim the back of the mans neck the experience was exactly like being there.

The most important option is the recorder you'll use instead of the camera audio system, unless you've spent $2000 or more on a camera with real audio.
