I am an audio beginner and have some questions relating to the Tascam DR70D.

Often, I feel the need to put the gain to High. This gives me a clear sound in the headphones and the recording dial is usually put around its midpoint to get good levels with my microphones.
When the gain is put on med I usually have to put the dial all the way up to maximum which I don't like to do as I feel I should be able to put it higher and lower which I can't if it is at max.
Can anyone give any suggestions as I thought in video and audio it is usually best to avoid high gain?

Also, can anyone explain what the Mic setting, MS mode 1/2 button actually does and what the options or Rec and Moni do?  ;)

HIGH gain is fine, but avoid HIGH+.
