Are there problems associated with running a stereo component designed to operate in Japan on 100V AC with a power transformer to connect to US 115V?

Depends on what kind of power supply arrangement is in there.  Does the manual have a spec page?  If the input is a switching type power supply, it may have a universal input of something like 90-264 VAC and you're fine.
