So I'm in Sports Authority the other day and I notice several sets of Ping Pong paddles and it gets me thinking about an idea for the pair of MSH-1A's I just bought...

EXCELLENT!
And I suppose the handles makes mounting to a mic bar/stand a bit easier as well. I'm gonna make on of these myself and finally use my C4's omni caps.

All of the ones I've seen do have some sort of covering, but then again so does the ping pong paddle... it's a layer of rubber on each side. I bought a paddle with the thickest padding. I've done some simple tests walking around from side to side while talking and it does seem to work well. I also repositioned the holders closer to the center and set it up so that the mics are now facing out away from the paddle.
Batchain, I cut off the handle, then attached the threaded part of a microphone holder to it.

cover it with a layer of thin foam rubber and some fluffly cloth material to kill the HF refections

If you are wanting to cover more surface area (larger paddle) you could try the same with one of these:

The Kadima / Smashball paddles are a good idea!
They are 9.5" dia., which is a really sweet size!

I'd consider trying to find a way of mounting the mics, where you have more flexibility in spacing, and, bringing the mic axis forward, to a range of 0º and outward to 30º, rather than have them facing the mics face at 90º to the soundfield.
I've got some of these around the house somewhere. I'll try and find them this weekend for a test.

Looks like you could just drill a small hole in the bottom of the cut off paddle handle and insert a female threaded sleeve to screw onto the mic stand.

I just took took apart a standard mic clip and used the section that contains the 5/8" thread mount by sliding it onto the paddle (I cut most of the handle off of the paddle first), and lining up where I'd need to drill the hole in the paddle.

And on the subject of the next great baffle.. Has anyone ever made an HRTF dummy head with one of those inflatible sex doll heads with the umm.. funny mouth?
Hmmm... an omni in each ear with a card in the mouth? ;D :o

looks like it might be too small for your mics, but it will be friggin' sweet for mine (dpa 4060).
