I have The Photographer's Handbook by John Hedgecoe that covers almost everything photographic. It has a lot more film and darkroom stuff than you're looking for, but many darkroom techniques translate directly into some of digital photography's most powerful tools. The book is predominantly black and white and most of the pics are small, but he crammed a lot of good stuff in there.
It looks like he's published several other books, one of which may be more appropriate for a novice.

Probably the best investment you can make is in something like
Bryan Peterson's book on seeing creatively. (http://www.amazon.com/Learning-See-Creatively-Composition-Photography/dp/0817441816/ref=sr_1_2?ie=UTF8&s=books&qid=1198080750&sr=1-2)
Years ago, I bought a couple of his books (understanding exposure and seeing creatively -- both are long out of print I'm sure) that had interactive CDs on them. Helped me a great deal. More than any other book, because it makes you think about how you're taking pictures. One of the reasons I have such a hard time with filmmakers is because I simply don't see things the way they do. Actually, when I'm on set, I couldn't give a rat's butt about the picture, I'm there for the sound. But... you have to see the image before you take the picture.
