I taped a comedian, Raymond the Amish Comic, recently and was wondering how to remove an underlying hiss in audacity.

Effects > Noise Removal
You need to find a few seconds on the recording where its just the noise...select - and use that for your noise profile...
Then play with the slider - I found it worked best at all the way to the left on the "Less" setting...
