How exactly would I go about making an adapter cable? I'm not really experienced with things like that. Is there any place I could buy one?

So all I would need is a dual mini XLR Y cable to 1/8", and it would function the same as if both mics were terminated into 1/8 without an adapter? Would they work with plug-in power?

Yes.  You could use your SP pre, you didn't mention if it was 1/8 input but I will assume it is, or plug in power.  Just let them know what it is for and they will wire it up correctly.
