another thought -- rip the dvd-v to mkv using makemkv, you can specify in makemkv which audio track(s) you want the mkv to contain. Then, open the mkv in foobar2000 and see how it plays -- the mkv should retain the dvd chapters and foobar2000 can be used to extract/convert the audio to wav/flac/etc. If the chapters don't split how you want, you could extract to one big file in foobar and open the wav/flac in cdwav, etc. to track/crop accordingly.
